Herder chef's knife - windmill knife - Santoku which is produced in Solingen. The blade is sharpened thin and blue-tiled. I am a personal fan of the Santoku knife because you can do a lot of work here. No matter whether fish, meat or vegetables, the thin blade only glides through the material to be cut. Another advantage of the Santoku knife is the slightly curved blade shape. As a result, the blade works like a weighing knife, which is particularly helpful when chopping herbs.
TIP:
If you want to push the material to be cut off the wooden cutting board, use the back of the blade for this. Thus, they protect the blade which then maintains its sharpness for longer.
Note:
A chef's knife does not belong in the dishwasher! If you have a carbon knife, rinse the knife briefly with clear water after use and then dry it well. Your knife thanks you for a regular drop of oil for carbon blades or wooden handles.
