Herder chef's knife - windmill knife - pointed back, large, which is produced in Solingen. The blade is thinly ground and blue-glazed. Due to the thin and flexible blade, the back tip is not only suitable for cutting meat and fish, but also for filleting.
Knives that have been blue-glazed by hand are extremely rare today.
The fine, smooth surface of the rear pointed blade cuts through the food particularly easily, even with hard sausage or vegetables such as carrots and celery.
The tip, which points subtly towards the back of the blade, makes this knife ideal for cutting on the board, because you can roll with it.

TIP:
If you want to push the material to be cut off the wooden cutting board, use the back of the blade for this. This protects the blade, which then retains its sharpness for longer.

A chef's knife does not belong in the dishwasher! If you have a carbon knife, rinse the knife briefly with clear water after use and then dry it well. Your knife will thank you for a regular drop of OIL for carbon blades or wooden handles.
